Ingredients

  • 4 fillets white fish fillets (cod, tilapia, or halibut)
  • 1 medium zucchini
  • 1 medium yellow squash
  • 1 medium red bell pepper
  • 1 cup cherry tomatoes
  • 3 tablespoons olive oil
  • 1 lemon
  • 2 tablespoons fresh parsley
  • 2 cloves garlic
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 4 sheets aluminum foil

Directions

Step 1

Preheat your oven to 400°F (200°C).

Slice the zucchini, yellow squash, and red bell pepper into thin strips. Halve the cherry tomatoes. Mince the garlic and chop the fresh parsley.

Cut 4 large sheets of aluminum foil, each approximately 12x16 inches.
