Ingredients

  • 12 oz Rotini pasta
  • 10 oz Canned tuna in water
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 0.5 medium Red onion
  • 0.25 cup Fresh parsley
  • 3 tbsp Extra-virgin olive oil
  • 2 tbsp Fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 small Garlic clove
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the rotini pasta and cook until al dente, according to the package instructions (usually about 8-10 minutes). Drain and rinse under cold water to cool it down. Set aside.

Step 2

While the pasta is cooking, prepare the dressing. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper until emulsified. Set aside.
