  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes (optional)
  • 1 teaspoon Sugar (optional, to balance acidity)
  • 0.5 cup Water or vegetable stock

Directions

Step 1

Wash the tomatoes thoroughly and cut a small 'X' on the bottom of each tomato with a sharp paring knife.

Step 2

Bring a large pot of water to a boil and prepare an ice water bath in a separate bowl.

Step 3

Blanch the tomatoes by boiling them for 30 seconds to 1 minute or until the skins start to peel back easily.

Step 4

Remove tomatoes with a slotted spoon and immediately transfer to the ice water bath to stop the cooking process.

Step 5

Peel off the tomato skins, cut out the cores, and chop the tomatoes into small chunks. Set aside.
