Ingredients

  • 2 medium zucchini
  • 2 medium yellow squash
  • 1 teaspoon salt

  • 2 cups cottage cheese
  • 1 cup shredded Parmesan cheese
  • 1 large, beaten egg
  • 2 tablespoons, chopped fresh basil
  • 0.5 teaspoon black pepper
  • 0.5 cup breadcrumbs
  • 1 tablespoon, melted butter

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x9-inch baking dish or similar-sized gratin dish.

Step 2

Thinly slice the zucchini and yellow squash into rounds (approximately 1/4-inch thick). Place the slices in a large colander and toss with 1 teaspoon of salt. Let them sit for 10 minutes to draw out moisture, then pat dry with a clean kitchen towel.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for another 1 minute until fragrant. Remove from heat and let cool slightly.
