Ingredients

  • 2 medium zucchini
  • 2 medium yellow squash
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • 0.5 cup panko breadcrumbs
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease or spray a 9x13-inch baking dish and set it aside.

Step 2

Wash and dry the zucchini and yellow squash. Trim the ends and slice them into thin rounds, approximately 1/4 inch thick.

Step 3

In a large mixing bowl, combine the sliced zucchini, yellow squash, olive oil, minced garlic, salt, black pepper, and Italian seasoning. Toss until the vegetables are evenly coated with the seasoning.
