Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1.5 cups cherry tomatoes
  • 1 medium cucumber
  • 1 medium red bell pepper
  • 0.5 medium red onion
  • 0.5 cup fresh parsley
  • 0.25 cup fresh mint
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup crumbled feta cheese (optional)

Directions

Step 1

Rinse the quinoa thoroughly under running water using a fine mesh strainer to remove its natural coating, which can taste bitter.

Step 2

In a medium saucepan, bring the 2 cups of water to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa has absorbed all the water.
