Ingredients

  • 1 cup Jasmine rice
  • 2 cups Water
  • 1 cup Coconut milk
  • 1 cup Whole milk
  • 0.5 cup Granulated sugar
  • 0.25 teaspoon Salt
  • 1 cup Fresh mango, diced
  • 1 cup Fresh pineapple, diced
  • 1 teaspoon Lime zest
  • 4 leaves Mint leaves (optional, for garnish)

Directions

Step 1

Rinse the jasmine rice thoroughly under cold water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, combine the rice and water. Bring to a boil over medium heat, then reduce the heat to low, cover, and simmer for 15 minutes or until the water is fully absorbed.

Step 3

Once the rice is cooked, add the coconut milk, whole milk, sugar, and salt to the saucepan. Cook over low heat, stirring frequently, for 10–15 minutes. The mixture should be thick and creamy.

Step 4

Remove the saucepan from heat and allow the mixture to cool to room temperature. Then, cover it with plastic wrap and chill in the refrigerator for at least 1 hour.

Step 5

Before serving, fold the diced mango, pineapple, and lime zest into the chilled rice pudding.

Step 6

Portion the dessert into serving bowls or glasses. Garnish each serving with fresh mint leaves if desired.

Step 7

Serve immediately and enjoy your refreshing Summer Rice Dessert!
