Ingredients

  • 300 grams penne pasta (or your favorite short pasta)
  • 2 cans canned tuna in olive oil, drained
  • 200 grams cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1 medium red bell pepper, diced
  • 1 small red onion, finely sliced
  • 100 grams kalamata olives, pitted and halved
  • 2 tablespoons fresh parsley, chopped
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain the pasta, rinse under cold water to stop the cooking process, and set aside to cool completely.

While the pasta cools, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber and red bell pepper, finely slice the red onion, and pit and halve the kalamata olives.
