Ingredients

  • 12 ounces pasta (rotini or bowtie)
  • 1.5 cups cherry tomatoes

  • 1 large red bell pepper

  • 0.5 cup black olives (sliced)
  • 0.75 cup feta cheese (crumbled)
  • 0.25 cup fresh parsley (chopped)
  • 0.25 cup olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 tablespoon white wine vinegar
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Drain and rinse under cold water to cool it down. Set aside.
