Ingredients

  • 12 oz spaghetti
  • 6 slices bacon
  • 3 tbsp olive oil
  • 3 count garlic cloves, minced
  • 0.25 cup fresh basil, chopped
  • 0.25 cup fresh parsley, chopped
  • 2 tsp fresh thyme leaves
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 0.5 cup parmesan cheese, grated
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente according to the package instructions, about 10-12 minutes. Reserve 1 cup of pasta water, then drain the spaghetti.

Step 2

While the spaghetti cooks, heat a large skillet over medium heat. Add the bacon strips and cook until crispy, about 7-8 minutes. Transfer the bacon to a paper towel-lined plate to cool, then crumble into small pieces. Set aside.

Step 3

In the same skillet, carefully remove excess bacon grease, leaving about 1 tablespoon. Add 2 tablespoons of olive oil to the skillet and heat over medium-low. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 4

Add the cooked spaghetti to the skillet with the garlic. Toss to coat the pasta in the garlic-oil mixture.

Step 5

Stir in the fresh basil, parsley, and thyme. Add the lemon zest, lemon juice, and the remaining tablespoon of olive oil. Toss well to combine.

Step 6

Gradually add reserved pasta water, a few tablespoons at a time, to loosen the sauce as needed. Stir in the grated parmesan cheese, and season with salt, black pepper, and red pepper flakes (if using). Adjust seasoning to taste.

Step 7

Transfer the spaghetti to serving bowls. Sprinkle the crumbled bacon on top of each portion, and garnish with extra herbs and parmesan cheese if desired.

Step 8

Serve immediately and enjoy your Summer Herb Spaghetti with Crumbled Bacon!
