  • 2 whole bay leaves
  • 1 teaspoon black peppercorns
  • 2 teaspoons sea salt
  • 8 cups water
  • 1 (optional, for added sweetness) corn cob (kernels removed)

Directions

Step 1

Heat the olive oil in a large stockpot over medium heat.

Add the chopped onion, sliced leek, carrots, and celery to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften and the onion turns translucent.

Stir in the zucchini and garlic, cooking for an additional 2-3 minutes to release their fragrances.
