Shuck the corn and remove any remaining silk. Bring a large pot of water to a boil and cook the ears of corn for 5-7 minutes, until tender but still crisp. Remove the corn and let it cool.
Once the corn has cooled, use a sharp knife to carefully slice the kernels off the cobs. Transfer the kernels to a large mixing bowl.
Dice the red bell pepper into small pieces and add it to the bowl with the corn.
Finely chop the red onion and fresh cilantro. Add both to the bowl.
