Ingredients

  • 2 large navel orange
  • 1 large grapefruit
  • 3 small mandarin oranges or clementines
  • 1 large lime
  • 8 medium-sized leaves fresh mint leaves
  • 2 tablespoons honey
  • 0.25 cup pomegranate seeds
  • 0.5 cup blueberries

Directions

Step 1

Peel the navel oranges using a sharp knife, removing all the white pith. Slice the oranges into thin rounds and cut each round in half. Place them into a large serving bowl.

Step 2

Cut the grapefruit into segments (known as supremes) by slicing between the membranes. Add the segments to the bowl with the oranges.

Step 3

Peel and separate the mandarin oranges or clementines into individual segments. Add these to the citrus mixture.

Step 4

Juice the lime into a small bowl. Finely chop the fresh mint leaves and add them to the lime juice.

Step 5

Whisk the honey into the lime juice and mint mixture to create the dressing.

Step 6

Drizzle the dressing over the citrus fruits in the bowl and gently toss to combine and coat the fruit evenly.

Step 7

Sprinkle the pomegranate seeds and blueberries over the top of the salad for added texture and bursts of flavor.

Step 8

Chill the salad in the refrigerator for about 10 minutes before serving for a refreshing experience. Enjoy!
