Ingredients

  • 1.5 cups Cherry tomatoes
  • 1 large Cucumber
  • 1 Red bell pepper

  • 1 cup Sweet corn kernels, cooked

  • 2 cups Arugula
  • 0.25 cup Extra-virgin olive oil
  • 2 tablespoons Lemon juice, freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 1 clove Garlic, minced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 0.25 cup Fresh basil leaves, thinly sliced

Directions

Step 1

Wash and dry all the vegetables thoroughly.
