Ingredients

  • 4 medium beets
  • 6 cups water
  • 3 tablespoons lemon juice
  • 2 tablespoons granulated sugar

  • 1 cup sour cream or plain Greek yogurt
  • 1 medium (diced) cucumber
  • 5 small (thinly sliced) radishes
  • 3 tablespoons chopped fresh dill
  • 2 large (chopped) hard-boiled eggs

Directions

Step 1

Rinse and peel the beets, then chop them into quarters for easier cooking.

Step 2

In a large pot, combine the chopped beets and 6 cups of water. Bring to a boil over medium-high heat, then reduce the heat to low and simmer for approximately 30-40 minutes, or until the beets are fork-tender.

Step 3

Remove the cooked beets from the pot and set them aside to cool. Reserve the beet cooking liquid in the pot.

Once the beets are cool enough to handle, grate them using a box grater or a food processor with a shredding blade.
