Ingredients

  • 6 slices thick-cut bacon
  • 1 large yellow onion
  • 3 cloves garlic
  • 2 15-ounce cans canned pinto beans
  • 2 15-ounce cans canned black beans
  • 0.5 cup ketchup
  • 0.5 cup BBQ sauce
  • 0.25 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat a large skillet or Dutch oven over medium heat.

Step 2

Dice the bacon into small pieces and cook in the skillet until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.

Step 3

Peel and dice the onion. Add it to the skillet with the bacon fat and sauté for 5-7 minutes, or until softened and golden brown.

Step 4

Mince the garlic and stir it into the onions. Cook for an additional minute until fragrant.

Step 5

Drain and rinse the pinto beans and black beans. Add them to the skillet, stirring to combine with the onions and garlic.

Step 6

In a medium bowl, whisk together the ketchup, BBQ sauce, brown sugar, apple cider vinegar, Dijon mustard, smoked paprika, chili powder, salt, and black pepper.

Step 7

Pour the sauce mixture over the beans and stir thoroughly to coat all the ingredients.

Step 8

Bring the mixture to a gentle simmer, then reduce the heat to low. Cover and cook for 40-50 minutes, stirring occasionally to prevent sticking.

Step 9

Stir the crispy bacon back into the beans during the last 10 minutes of cooking.

Step 10

Remove from heat and serve the BBQ beans warm as a side dish to your favorite summer barbecue meals.
