Ingredients

  • 2 cups glutinous rice
  • 1.5 cups coconut milk
  • 0.75 cups sugar
  • 0.5 teaspoons salt
  • 8 large pieces banana leaves
  • 4 cups water
  • 1 roll string

Directions

Step 1

Rinse the glutinous rice under cold running water until the water runs clear. Soak in 4 cups of water for at least 4 hours or overnight.

Step 2

Drain the rice thoroughly and transfer it to a large mixing bowl.

Step 3

In a saucepan over medium heat, combine the coconut milk, sugar, and salt. Stir and cook until the sugar is completely dissolved. Do not allow the mixture to boil.

Step 4

Pour the coconut milk mixture over the soaked rice and mix well to ensure all grains are coated.

Step 5

Wash the banana leaves under warm running water to remove any dirt or impurities. Pass them over a flame or briefly dip them in hot water to make them pliable.

Step 6

Cut the banana leaves into 10-inch by 10-inch squares.

Step 7

Lay each banana leaf square on a flat surface and place about 1/4 cup of the rice mixture on the center. Fold both sides towards the center, then fold the ends to form a rectangular parcel. Secure with string.

Step 8

Prepare a steamer by bringing water to a boil over medium heat.

Step 9

Arrange the wrapped suman in the steamer basket, leaving space for steam to circulate between pieces.

Step 10

Cover and steam for about 1 to 1.5 hours, or until the rice is fully cooked and has absorbed the coconut milk.

Step 11

Remove the suman from the steamer and let it cool slightly before serving.

Step 12

Unwrap the suman and enjoy plain or with a sprinkling of sugar, a drizzle of caramel, or paired with hot chocolate.
