Ingredients

  • 4 large Russet potatoes
  • 3 tablespoons Olive oil
  • 2 teaspoons Ground sumac
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Chopped fresh parsley (optional, for garnish)

Directions

Step 1

Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it with oil.

Step 2

Wash the potatoes thoroughly and pat them dry. Leave the skins on for extra texture. Cut each potato into 8 evenly-sized wedges.

Step 3

Place the potato wedges in a large bowl, then drizzle with olive oil. Toss well to coat all wedges evenly.

Step 4

In a small bowl, mix together sumac, paprika, garlic powder, salt, and black pepper.

Step 5

Sprinkle the spice mix over the potato wedges. Toss again to ensure the spices are evenly distributed.

Step 6

Spread the seasoned wedges in a single layer on the prepared baking sheet, making sure they are not overcrowded for even cooking.

Step 7

Bake in the preheated oven for 30-35 minutes, flipping the wedges halfway through, until golden brown and crispy on the outside and tender on the inside.

Step 8

Remove from the oven and transfer the wedges to a serving platter. Garnish with chopped parsley, if desired.

Step 9

Serve warm with your favorite dipping sauce or enjoy on their own.
