Ingredients

  • 500 grams Pork tenderloin
  • 4 tablespoons Soy sauce
  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 2 teaspoons Cornstarch
  • 3 tablespoons Vegetable oil
  • 3 cloves Garlic cloves, minced
  • 1 tablespoon Ginger, minced
  • 4 stalks Green onions, sliced
  • 1 Carrot, julienned
  • 1 Red bell pepper, thinly sliced
  • 400 grams Egg noodles
  • 2 tablespoons Dark soy sauce
  • 2 tablespoons Oyster sauce
  • 1 teaspoon Sesame oil
  • 1 teaspoon Sugar
  • 100 milliliters Chicken or vegetable stock
  • 2 tablespoons Fresh cilantro, chopped (optional garnish)

Directions

Step 1

Slice the pork tenderloin into thin strips. In a small bowl, combine 3 tablespoons of soy sauce, Shaoxing wine, and cornstarch to create a marinade.

Step 2

Add the pork strips to the marinade and mix well. Let it marinate for 15 minutes while you prepare the other ingredients.

Step 3

Cook the egg noodles according to the package instructions, drain, rinse with cold water, and set aside.

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated pork and stir-fry for 3-4 minutes until cooked through. Remove from the pan and set aside.

In the same skillet or wok, add the remaining tablespoon of vegetable oil. Sauté the minced garlic and ginger for 30 seconds until fragrant.

Cook for an additional 2-3 minutes, stirring gently, until the noodles are warmed through and the sauce is fully absorbed.
