Ingredients

  • 200 g all-purpose flour
  • 1 tsp ground cinnamon
  • 1.5 tsp baking powder
  • 0.25 tsp salt
  • 125 g unsalted butter
  • 100 g granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 60 ml milk
  • 150 g sultanas
  • 1 medium apple (peeled, cored, and diced)
  • 2 tbsp confectioners' sugar (for dusting)

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 20x20cm (8x8-inch) baking tin. Line the bottom with parchment paper for easy removal.

Step 2

In a medium bowl, whisk together the flour, cinnamon, baking powder, and salt. Set aside.

Step 3

In a large bowl, cream the butter and sugar together using a hand mixer or stand mixer until light and fluffy. This should take about 2-3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Step 5

Gradually mix the dry ingredients into the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Avoid overmixing — mix until just combined.

Step 6

Fold in the sultanas and diced apple gently using a spatula, ensuring they are evenly distributed.

Step 7

Spoon the batter into the prepared baking tin and spread it out evenly with the back of a spoon.

Step 8

Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a skewer inserted into the center comes out clean.

Step 9

Allow the slice to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Step 10

Once cooled, dust the top with confectioners' sugar using a fine sieve. Cut into 12 squares or bars and serve.
