  • 2 cups crushed tomatoes
  • 1 cup, rinsed and drained lentils
  • 1.5 cups (or 1 can, rinsed and drained) cooked chickpeas
  • 6 cups vegetable or chicken stock
  • 0.5 cup vermicelli noodles
  • 2 tablespoons all-purpose flour
  • 0.5 cup water
  • 0.5 cup, chopped fresh cilantro
  • 0.25 cup, chopped fresh parsley
  • 2 tablespoons lemon juice
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon (or to taste) black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat. Add the onion, celery, and carrot, and sauté until softened, about 5 minutes.

Step 2

Stir in the garlic, ground cinnamon, ground ginger, ground turmeric, ground cumin, and paprika. Cook for another minute until the spices become fragrant.
