  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons, chopped Fresh cilantro
  • 1 medium (juice and zest) Lime
  • 1 cup (optional, like cheddar or Monterey Jack) Shredded cheese
  • 0.5 cup (optional for serving) Sour cream
  • 1 medium, sliced (optional for serving) Avocado

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Add the red bell pepper, green bell pepper, zucchini, and red onion to the skillet. Sauté for 5-6 minutes, stirring occasionally, until the vegetables are softened and slightly caramelized.
