Ingredients

  • 4 pieces (6-8 oz each) Sirloin steaks
  • 4 tablespoons Brown sugar
  • 2 teaspoons Kosher salt
  • 1 teaspoon Freshly ground black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 sprigs Fresh rosemary
  • 2 sprigs Fresh thyme

Directions

Step 1

Take the sirloin steaks out of the fridge and let them come to room temperature for about 30 minutes to ensure even cooking.

Step 2

In a small bowl, mix together the brown sugar, kosher salt, black pepper, garlic powder, and paprika.

Step 3

Pat the steaks dry with a paper towel to remove any moisture. This helps create a better sear.

Step 4

Rub each steak generously with olive oil, then coat evenly with the brown sugar mixture on all sides.

Step 5

Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat until it is very hot but not smoking.

Step 6

Add the butter to the pan and swirl to melt. Once melted and foamy, carefully place the steaks in the pan.

Step 7

Cook the steaks for 3 minutes on one side without disturbing to form a crust. Flip the steaks and cook for another 3 minutes.

Step 8

Add the rosemary and thyme sprigs to the pan. Tilt the pan slightly and use a spoon to baste the steaks with the melted butter and herbs for 1-2 minutes.

Step 9

For medium-rare doneness, check that the internal temperature is around 130°F (54°C). Adjust cooking time according to your desired doneness level.

Step 10

Remove the steaks from the pan and let them rest on a cutting board for 5 minutes to allow the juices to redistribute.

Step 11

Serve the sugared sirloins with your favorite sides and enjoy this sweet and savory delight!
