Ingredients

  • 6 pieces Chicken thighs (bone-in, skin-on)
  • 3 tablespoons Brown sugar
  • 1.5 tablespoons Soy sauce
  • 3 cloves Garlic (minced)
  • 2 tablespoons Lime juice (freshly squeezed)
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Fresh ginger (grated)
  • 1 cup Coconut milk
  • 1 cup Pineapple chunks (optional, for garnish)
  • 2 stalks Scallions (sliced, for garnish)
  • 2 tablespoons Cilantro (chopped, for garnish)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the chicken thighs dry with paper towels. Season both sides with salt and black pepper.

Step 3

Heat 1 tablespoon of vegetable oil in a large, oven-safe skillet over medium-high heat.

Step 4

Place the chicken thighs, skin-side down, in the skillet. Cook for 4-5 minutes until the skin is golden and crispy. Flip the chicken and sear the other side for another 3 minutes. Remove the chicken and set aside.

Step 5

In the same skillet, lower the heat to medium and add the remaining 1 tablespoon of vegetable oil.

Add the minced garlic and grated ginger to the skillet. Sauté for 30 seconds until fragrant.

Stir in the brown sugar, soy sauce, lime juice, and coconut milk. Mix well, scraping up any browned bits from the bottom of the pan.

Return the chicken thighs to the skillet, skin-side up. Spoon the sauce over the chicken to coat.

Transfer the skillet to the preheated oven and bake for 30 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce has thickened.

If desired, add pineapple chunks to the skillet during the last 10 minutes of baking for a sweet and tangy addition.

Remove the skillet from the oven and let the chicken rest for 5 minutes.

Garnish with chopped cilantro, sliced scallions, and any reserved pineapple chunks before serving. Serve with rice or a side of your choice.
