Ingredients

  • 2 cups All-purpose flour
  • 3 tablespoons Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter (cold, diced)
  • 0.75 cup Raisins
  • 0.75 cup Whole milk
  • 1 teaspoon Vanilla extract
  • 1 Egg (optional, for egg wash)
  • 1 tablespoon Coarse sugar (optional, for sprinkling)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Add the cold, diced butter to the bowl. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.

Step 4

Stir in the raisins, ensuring they are evenly distributed throughout the flour mixture.

Step 5

In a separate small bowl or measuring cup, whisk together the milk and vanilla extract.

Step 6

Gradually add the liquid mixture to the dry ingredients, mixing with a fork or wooden spoon until the dough just comes together. Be careful not to overmix.

Step 7

Turn the dough out onto a lightly floured surface and gently knead it 3-4 times to bring it together.

Step 8

Pat the dough into a circle about 1-inch thick. Using a floured knife or dough cutter, cut the circle into 8 equal wedges.

Step 9

Place the wedges onto the prepared baking sheet, spacing them slightly apart.

Step 10

If desired, whisk the egg and lightly brush it over the tops of the scones. Sprinkle with coarse sugar for extra sweetness and texture.

Step 11

Bake the scones in the preheated oven for 12-15 minutes, or until they are golden brown and cooked through.

Step 12

Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Step 13

Serve warm or at room temperature with butter, jam, or clotted cream. Enjoy!
