Peel the peaches by making a small X on the bottom of each peach and blanching them in boiling water for 1 minute. Remove the peaches and immediately place them in an ice bath to cool. Once cool, gently remove the skins.
Cut the peaches in half, remove the pits, and dice them into chunks.
In a blender, combine the peeled peaches, unsweetened peach juice, lemon juice, and ice cubes. Blend until smooth and silky.
Optional: If you prefer a smoother drink, strain the peach puree through a fine-mesh sieve to remove any pulp.
Chill the peach puree in the refrigerator for at least 15 minutes, or until ready to serve.
To assemble the Bellinis, pour approximately 2 tablespoons of peach puree into each champagne glass.
