Ingredients

  • 1 tablespoon Powdered gelatin
  • 0.25 cup Cold water
  • 0.25 cup Boiling water
  • 0.75 cup Powdered erythritol (or other powdered sugar-free sweetener)
  • 1 teaspoon Vanilla extract
  • 0.125 teaspoon Salt

Directions

Step 1

1. Prepare the gelatin mixture by sprinkling 1 tablespoon of powdered gelatin over 1/4 cup of cold water in a small bowl. Allow it to bloom for 5 minutes, or until it fully absorbs the water and thickens.

Step 2

2. In a separate mixing bowl, add 1/4 cup of boiling water and whisk in the bloomed gelatin until it dissolves completely.

Step 3

3. Using a hand mixer or a stand mixer with a whisk attachment, slowly beat in 3/4 cup of powdered erythritol. Continue mixing on medium speed for about 1-2 minutes until the mixture begins to froth.

Step 4

4. Add 1 teaspoon of vanilla extract and 1/8 teaspoon of salt. Increase the mixer speed to high and whip the mixture for 8-10 minutes, or until it forms stiff peaks and becomes light and fluffy.

Step 5

5. To make marshmallows, pour the mixture into a greased or parchment-lined 8x8-inch pan and smooth it out with a spatula. Let it sit at room temperature for 4-6 hours, or until firm. Once set, cut into squares using a sharp knife dusted with powdered erythritol.

Step 6

6. For marshmallow creme, skip the setting step and use the freshly whipped mixture immediately as a topping or filling.

Step 7

7. Store the marshmallows or creme in an airtight container for up to 1 week at room temperature.
