Ingredients

  • 10 whole Jalapeno peppers
  • 1 large Green bell pepper
  • 1.25 cups White vinegar
  • 1.5 cups Truvia (granulated sugar substitute)
  • 1 packet Low-sugar pectin
  • 0.5 cups Water
  • 0.25 teaspoons Salt
  • 3 drops Green food coloring (optional)

Directions

Step 1

Wash and dry the jalapeno peppers and green bell pepper. Remove the stems and seeds for a milder jelly, or leave the seeds if you prefer more heat.

Step 2

Finely chop the jalapenos and the green bell pepper, or pulse them in a food processor until finely minced.

Step 3

In a large non-reactive pot, combine the peppers, white vinegar, and water. Stir to combine and bring the mixture to a boil over medium heat.

Step 4

Once boiling, turn the heat to low and let it simmer for 10 minutes to extract the flavors from the peppers.

Step 5

After simmering, strain the mixture through a fine mesh strainer or cheesecloth into another pot to remove the pepper solids, leaving you with a smooth pepper-infused liquid. You can skip this step if you prefer a chunkier jelly.

Step 6

Return the strained liquid (or unstrained mixture, if preferred) to the pot and stir in Truvia, salt, and optional green food coloring. Bring it to a gentle boil.

Step 7

Whisk in the low-sugar pectin and boil the mixture for 1-2 minutes, stirring constantly to ensure the pectin dissolves evenly.

Step 8

Remove the pot from the heat and ladle the hot jelly into sterilized jars, leaving about 1/4 inch of headspace at the top of each jar.

Step 9

Seal the jars with clean lids and rings. Process the jars in a boiling water bath for 10 minutes to ensure proper preservation.

Step 10

Carefully remove the jars from the water bath and let them cool on a kitchen towel. Check the seals once cooled; the lids should not flex when pressed.

Step 11

Store the jelly in a cool, dark place for up to 1 year. Once opened, refrigerate and consume within 2-3 weeks. Enjoy your sugar-free jalapeno jelly on crackers, sandwiches, or as a meat glaze!
