Ingredients

  • 6 large Egg yolks
  • 0.5 cup Granulated sugar substitute (erythritol, stevia, or monk fruit)
  • 1 cup Heavy cream
  • 2 cups Whole milk
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground cinnamon
  • 0.5 cup Rum or bourbon (optional)
  • 0 optional Whipped cream, for garnish
  • 0 optional Extra ground nutmeg, for garnish

Directions

Step 1

In a medium bowl, whisk together the egg yolks and sugar substitute until the mixture becomes thick and light yellow in color.

Step 2

In a medium saucepan, combine the heavy cream, whole milk, nutmeg, and cinnamon. Set the heat to medium-low and stir frequently until the mixture is hot but not boiling, about 5-7 minutes.

Step 3

Gradually temper the egg yolks by slowly adding a ladle of the hot milk mixture into the yolks while whisking constantly. This prevents the eggs from curdling.

Step 4

Pour the tempered egg mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly with a wooden spoon, until the eggnog thickens slightly, about 5 minutes. The mixture should coat the back of the spoon but should not boil.

Remove the saucepan from the heat and stir in the vanilla extract. If using, add rum or bourbon to the mixture.
