Ingredients

  • 12 pieces Pitted Medjool Dates
  • 1 cup Raw Almonds
  • 1 cup Raw Walnuts
  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Vanilla Extract
  • 0.25 cup Unsweetened Shredded Coconut
  • 1 pinch Pinch of Salt

Directions

Step 1

Place the pitted Medjool dates in a food processor and pulse a few times to break them into smaller pieces.

Step 2

Add the raw almonds, raw walnuts, ground cinnamon, vanilla extract, and a pinch of salt to the food processor.

Step 3

Process the mixture until it forms a sticky dough. This may take about 1-2 minutes, and you may need to stop and scrape down the sides as needed.

Step 4

Scoop out about 1 tablespoon of the mixture and roll it between your hands to form a ball. Repeat with the rest of the mixture to create 16 balls.

Step 5

Roll each ball in the unsweetened shredded coconut until evenly coated.

Step 6

Place the balls on a plate or in an airtight container. Refrigerate for at least 30 minutes to firm up before serving.

Step 7

Store the sugar-free cinnamon nut balls in the refrigerator for up to 1 week or freeze for longer storage.
