Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
In a medium saucepan, combine the butter, water, and a pinch of salt. Heat over medium heat until the butter has melted and the mixture starts to boil.
Reduce the heat to low and stir in the flour all at once. Mix vigorously with a wooden spoon until the mixture forms a smooth ball and pulls away from the sides of the pan.
Transfer the dough to a mixing bowl and let it cool for 5 minutes.
Beat the eggs into the dough one at a time, mixing well after each addition, until the dough is smooth and shiny and forms a thick ribbon when dropped from the spoon.
Transfer the dough to a piping bag fitted with a large round or star nozzle. Pipe 10-12cm (4-5 inch) long eclair shapes onto the prepared baking sheet, spacing them apart to allow for expansion.
Bake in the preheated oven for 20 minutes. Reduce the temperature to 180°C (350°F) and bake for an additional 10-15 minutes, or until golden brown and crisp.
Remove the eclairs from the oven and use a skewer to poke two small holes in the bottom of each to release steam. Allow them to cool completely on a wire rack.
To make the filling, whip the heavy cream, vanilla extract, and sugar-free sweetener together in a bowl until stiff peaks form.
Transfer the cream to a piping bag fitted with a small nozzle. Insert the nozzle into the holes at the bottom of each eclair and fill with the whipped cream.
For the glaze, heat the sugar-free dark chocolate and heavy cream in a microwave-safe bowl in 20-second intervals, stirring between each, until the chocolate is smooth and melted.
Dip the tops of the filled eclairs into the chocolate glaze or spread the glaze over the tops with a small spatula. Allow the glaze to set for 10-15 minutes.
