Ingredients

  • 110 g Unsalted butter
  • 240 ml Water
  • 1 pinch Salt
  • 130 g All-purpose flour
  • 4 whole Large eggs
  • 240 ml Heavy cream
  • 1 tsp Vanilla extract
  • 2 tbsp Sugar-free sweetener (e.g., erythritol)
  • 100 g Sugar-free dark chocolate
  • 50 ml Heavy cream (for glaze)

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.

Step 2

In a medium saucepan, combine the butter, water, and a pinch of salt. Heat over medium heat until the butter has melted and the mixture starts to boil.

Step 3

Reduce the heat to low and stir in the flour all at once. Mix vigorously with a wooden spoon until the mixture forms a smooth ball and pulls away from the sides of the pan.

Transfer the dough to a mixing bowl and let it cool for 5 minutes.

Beat the eggs into the dough one at a time, mixing well after each addition, until the dough is smooth and shiny and forms a thick ribbon when dropped from the spoon.

Transfer the dough to a piping bag fitted with a large round or star nozzle. Pipe 10-12cm (4-5 inch) long eclair shapes onto the prepared baking sheet, spacing them apart to allow for expansion.
