  • 1 cup Fresh strawberries
  • 1 cup Fresh blueberries
  • 1 cup Fresh raspberries
  • 1 cup Plain Greek yogurt
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Honey or maple syrup (optional for sweetness)
  • 1 cup Water

Directions

Step 1

Rinse and hull the strawberries, then slice them into smaller pieces for easier blending.

Step 2

Blend the strawberries with 1/3 cup of water until smooth. Taste and, if needed, add 2 teaspoons of honey or maple syrup for sweetness. Pour the puree into a bowl and set aside.

Step 3

Repeat the blending process with the blueberries: blend them with 1/3 cup of water until smooth, sweeten if needed, and pour the puree into a separate bowl.

Step 4

Repeat with the raspberries, blending with the remaining 1/3 cup of water, optionally sweetening, and setting aside the raspberry puree in its own bowl.

Step 5

In another bowl, mix the Greek yogurt and vanilla extract until smooth. Taste and add a small drizzle of honey or maple syrup if you prefer a sweeter layer.

Step 6

Take popsicle molds and alternate layers of strawberry puree, yogurt, blueberry puree, yogurt, and raspberry puree to create a striped effect. Use a small spoon to gently smooth each layer to create clean stripes.

Step 7

Insert popsicle sticks into the molds and gently tap the molds on a countertop to remove any air bubbles.

Step 8

Freeze for at least 4-6 hours, or until completely solid.

To remove the pops from the molds, briefly run the molds under warm water to loosen and carefully pull out the popsicles.
