Ingredients

  • 300 g All-purpose flour
  • 7 g Instant yeast
  • 1 tsp Salt
  • 150 ml Warm water
  • 2 tbsp Olive oil
  • 800 g Onions
  • 30 g Unsalted butter
  • 100 g Smoked bacon (diced, optional for additional flavor)
  • 200 g Sour cream
  • 2 large Eggs
  • 0.25 tsp Ground nutmeg
  • 0.5 tsp Ground black pepper
  • 0.5 tsp Salt (for filling)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, instant yeast, and salt. Add the warm water and olive oil, and knead the dough for about 8-10 minutes until it is smooth and elastic.

Step 2

Cover the dough with a clean kitchen towel and let it rise in a warm place for 1 hour, or until it has doubled in size.

Step 3

While the dough is rising, peel and finely slice the onions. In a large skillet, melt unsalted butter over medium heat. Add the onions and cook, stirring occasionally, until they are soft and slightly caramelized (about 10-12 minutes). If using diced smoked bacon, add it to the skillet and cook until browned.

Step 4

Preheat your oven to 200°C (392°F). Lightly grease a rectangular baking dish or a 28 cm (11-inch) tart pan.

Step 5

Roll out the dough into the shape of your baking dish or tart pan, making sure it’s slightly larger so you can create a small edge all around. Transfer the dough to the prepared baking dish and press it gently into the corners and edges.

Step 6

In a medium mixing bowl, whisk together the sour cream, eggs, ground nutmeg, ground black pepper, and salt until smooth. Stir in the cooked onions (and bacon, if using).

Step 7

Spread the onion mixture evenly over the dough, smoothing it out with the back of a spoon.

Step 8

Bake the Zwiebelkuchen in the preheated oven for 40-45 minutes, or until the edges of the crust are golden brown and the filling is set and slightly browned on top.

Step 9

Remove from the oven and let it cool for 10 minutes before slicing. Serve warm or at room temperature. Enjoy your sugar-free Zwiebelkuchen as a savory treat or meal!
