  • 2 tablespoons Extra olive oil (for brushing)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, instant yeast, and salt. Mix well to evenly distribute the dry ingredients.

Step 2

Add the olive oil and warm water to the dry ingredients. Stir until a shaggy dough forms, then knead the dough on a lightly floured surface for about 8–10 minutes until it becomes smooth and elastic.

Step 3

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rest in a warm place for 1 hour, or until it doubles in size.

Step 4

Once the dough has risen, punch it down to release the air and divide it into 8 equal portions. Shape each portion into a ball and let them rest for another 15 minutes, covered with a damp cloth.
