Ingredients

  • 200 grams Sugar-free white chocolate
  • 60 milliliters Heavy cream
  • 20 grams Unsalted butter
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Powdered erythritol or alternative powdered sweetener (optional, for coating)

Directions

Step 1

Chop the sugar-free white chocolate into small pieces and place it in a heatproof bowl.

Step 2

In a small saucepan, heat the heavy cream and unsalted butter over medium heat until it begins to simmer, but do not let it boil.

Step 3

Pour the hot cream and butter mixture over the chopped white chocolate. Let it sit for 2 minutes to allow the chocolate to begin melting.

Step 4

Using a silicone spatula or whisk, gently stir the mixture until smooth and fully combined. If the chocolate does not melt completely, you can warm the bowl over a double boiler or heat in short bursts in the microwave (10 seconds at a time, stirring in between) until smooth.

Step 5

Add the vanilla extract to the mixture and stir to integrate.

Step 6

Cover the mixture with plastic wrap, pressing the wrap directly onto the surface, and refrigerate for 2 hours or until firm.

Step 7

Once the mixture is set, use a small spoon or melon baller to scoop out portions of the ganache and roll them into ball shapes using your hands. If the mixture becomes too soft while rolling, refrigerate briefly to firm it up again.

Step 8

Optional: Roll the truffles in powdered erythritol or any other sugar-free coating of your choice, such as finely chopped nuts or unsweetened shredded coconut.

Step 9

Place the finished truffles on a parchment-lined tray and refrigerate for 30 minutes to set. Store them in an airtight container in the refrigerator for up to 1 week.
