Ingredients

  • 4 cups (diced) Watermelon
  • 1 cup Coconut milk (unsweetened, canned)
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Lime juice
  • 1 teaspoon Stevia or monk fruit sweetener (optional)

Directions

Step 1

Dice the watermelon into small cubes and remove any seeds. Measure out 4 cups of diced watermelon.

Step 2

Place the diced watermelon in a blender and blend until smooth. If needed, strain the mixture through a fine mesh sieve to remove pulp for a smoother texture.

Step 3

Add the coconut milk, vanilla extract, lime juice, and optional sweetener (if needed for sweetness) to the blender with the watermelon puree. Blend until all ingredients are well combined.

Step 4

Pour the mixture into a shallow, freezer-safe container. Cover tightly with a lid or plastic wrap.

Step 5

Place the container in the freezer and freeze for 2-3 hours. Every 30 minutes, remove it from the freezer and use a fork to scrape and stir the mixture to break up ice crystals. Repeat this process until the mixture reaches a creamy, ice cream-like consistency.

Step 6

Once fully frozen and creamy, scoop the watermelon ice cream into bowls and serve immediately.

Step 7

Store any leftovers in a freezer-safe container for up to 1 week. Allow it to soften at room temperature for 5-10 minutes before scooping.
