Ingredients

  • 2 medium Carrots
  • 3 medium Celery stalks
  • 1 large Yellow onion
  • 4 whole Garlic cloves
  • 1 medium Zucchini
  • 1 large Tomato
  • 2 whole Bay leaves
  • 1 small bunch Fresh parsley
  • 5 sprigs Fresh thyme
  • 1 teaspoon Peppercorns
  • 1 teaspoon Sea salt
  • 10 cups Water

Directions

Step 1

Wash all the vegetables thoroughly to remove any dirt or debris.

Step 2

Peel the carrots and onion. Roughly chop the carrots, celery, onion, zucchini, and tomato into large chunks. Smash the garlic cloves with the flat side of a knife to release their aroma.

Step 3

In a large stockpot, combine the chopped vegetables, bay leaves, parsley, thyme, peppercorns, and sea salt.

Step 4

Add 10 cups of water to the pot and bring to a boil over high heat.

Step 5

Once boiling, reduce the heat to low and let the broth simmer uncovered for 60 minutes, stirring occasionally.
