  • 1 teaspoon Baking powder

  • 0.5 cups Unsweetened ube jam (halaya)
  • 0.25 cups Unsalted butter, softened (or coconut oil for dairy-free)
  • 0.5 cups Granulated monk fruit sweetener (or other sugar-free sweetener)
  • 1 pieces Large egg (or flax egg for vegan option)
  • 1 teaspoon Ube extract
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium-sized mixing bowl, whisk together the almond flour, coconut flour, baking powder, and salt. Set aside.

Step 3

In a large bowl, use a hand mixer or stand mixer to cream the softened butter (or coconut oil) and granulated monk fruit sweetener until light and fluffy, about 2-3 minutes.

Add the unsweetened ube jam, egg (or flax egg, if vegan), ube extract, and vanilla extract to the wet mixture, and beat until well combined.
