Ingredients

  • 300 grams Water spinach (kangkung)
  • 3 cloves Garlic
  • 3 medium Shallots
  • 2 pieces Red chilies
  • 2 pieces Bird’s eye chilies (optional)
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Salt
  • 0.5 teaspoon White pepper powder
  • 1 tablespoon Oyster sauce (sugar-free or low sugar)
  • 50 milliliters Water

Directions

Step 1

Wash the water spinach thoroughly under running water and drain. Separate the stems from the leaves for even cooking.

Step 2

Peel and finely slice the garlic and shallots. Slice the red chilies and bird’s eye chilies thinly.

Step 3

Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium heat.

Step 4

Add the sliced garlic and shallots and stir-fry for 1 minute until fragrant.

Step 5

Add the sliced red chilies and bird’s eye chilies (if using) and stir-fry for another 30 seconds.

Step 6

Increase the heat to medium-high. Add the water spinach stems first, followed by the leaves, and stir quickly to combine.

Step 7

Season with salt, white pepper powder, and sugar-free oyster sauce. Stir to evenly distribute the seasonings.

Step 8

Pour in 50 milliliters of water and continue stir-frying for 2–3 minutes, or until the water spinach is wilted but still bright green. Avoid overcooking.

Step 9

Taste and adjust the seasoning if necessary. Remove from heat and transfer to a serving plate.

Step 10

Serve hot as a side dish alongside steamed rice or your favorite protein.
