Ingredients

  • 200 grams Almond flour
  • 100 grams Whole wheat flour
  • 150 grams Unsalted butter (cold, diced)
  • 3 tablespoons Cold water
  • 150 grams Dates (pitted and chopped)
  • 100 grams Raisins
  • 100 grams Currants
  • 50 grams Dried apricots (chopped)
  • 1 medium Apple (peeled, cored, and grated)
  • 1 orange Zest of an orange
  • 1 orange Juice of an orange
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoons Ground nutmeg
  • 0.25 teaspoons Ground cloves
  • 2 tablespoons Almond milk (for brushing)

Directions

Step 1

In a mixing bowl, combine almond flour and whole wheat flour.

Step 2

Add the cold, diced butter to the flour mixture. Using your fingertips, rub the butter into the flour until the mixture resembles fine breadcrumbs.

Step 3

Add cold water, one tablespoon at a time, and mix until the dough comes together. Form the dough into a ball, wrap it in cling film, and refrigerate for 30 minutes.

For the filling, combine the chopped dates, raisins, currants, dried apricots, grated apple, orange zest, orange juice, cinnamon, nutmeg, and cloves in a saucepan.

Set the saucepan over medium heat and cook the mixture for about 10 minutes, stirring occasionally, until it becomes soft and aromatic. Remove from heat and let it cool completely.

Preheat the oven to 180°C (350°F). Grease a 12-hole muffin tray or line it with baking paper.

Roll out the chilled dough on a lightly floured surface to a thickness of about 3mm (1/8 inch). Use a round cutter (slightly larger than the holes in your muffin tray) to cut out 12 circles for the pie bases.

Press the dough circles into the prepared muffin tray holes, gently molding them to fit.

Spoon the cooled fruit filling evenly into each pastry shell.

Re-roll any leftover dough and use a smaller round cutter or decorative cutter (e.g., star shape) to create lids or toppers for the pies.

Place the lids or toppers over the filled pastry shells. Brush the tops lightly with almond milk for a golden finish.

Bake the mince pies for 20–25 minutes, or until the pastry is golden brown and firm to the touch.

Allow the pies to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
