Ingredients

  • 1 liter Full-fat milk
  • 4 tablespoons Powdered erythritol (or any natural sugar-free sweetener)
  • 2 tablespoons Ghee (clarified butter)
  • 0.5 teaspoon Cardamom powder
  • 2 tablespoons Chopped nuts (optional, for garnish)

Directions

Step 1

Pour the full-fat milk into a deep, heavy-bottomed pan or kadai and bring it to a boil over medium heat.

Step 2

Once the milk starts boiling, lower the heat and let it simmer. Stir the milk frequently to prevent it from sticking to the bottom or sides of the pan.

Step 3

Continue simmering the milk until it thickens and reduces to about 1/3 of its original volume. This process can take around 45-60 minutes.

Step 4

Once the milk has reduced, add the powdered erythritol and mix well. Continue cooking on low heat until the mixture begins to solidify and separates slightly from the pan.

Step 5

Add the ghee and cardamom powder to the mixture. Stir well to incorporate and cook for another 10-15 minutes until the mixture becomes fudgy and holds together.

Step 6

Grease a small plate or tray with ghee and pour the milk mixture onto it. Flatten and smooth the top with a spatula.

Step 7

Allow the milk cake to cool to room temperature, then refrigerate it for at least 1-2 hours to set.

Step 8

Once the milk cake is firm, cut it into squares or diamond shapes. Garnish with chopped nuts if desired and serve.
