Ingredients

  • 4 cups Whole milk
  • 0.5 cups Heavy cream
  • 0.5 teaspoons Cardamom powder
  • 2 tablespoons Almond flour
  • 2 tablespoons Crushed pistachios
  • 4 tablespoons Stevia or erythritol (granulated, sugar-free sweetener)
  • 1 teaspoons Rose water

Directions

Step 1

Pour the whole milk and heavy cream into a heavy-bottomed pan.

Step 2

Bring the mixture to a boil over medium heat, stirring frequently to prevent it from sticking to the bottom.

Step 3

Once boiling, lower the heat to medium-low and allow the milk to simmer. Continue stirring occasionally and scrape the sides of the pan to incorporate the milk solids back into the mixture.

Step 4

After about 60 minutes, the milk will reduce to half its original quantity and thicken to a creamy consistency. This is the base for the kulfi.

Step 5

Add the almond flour to the reduced milk and mix well to enhance the nutty flavor and texture of the kulfi.

Stir in the cardamom powder and simmer for another 5 minutes, ensuring it's fully mixed.

Remove the pan from heat and allow the mixture to cool slightly for about 10 minutes.

Step 8

Once cooled slightly, add the stevia or erythritol and rose water, stirring well to evenly incorporate the sweetener.

Mix in the crushed pistachios, reserving a small amount for garnishing if desired.

Pour the mixture into kulfi molds or small freezer-safe containers, ensuring they are filled evenly.

Cover the molds with lids or aluminum foil, and freeze for at least 6-8 hours or until fully set.

Step 12

To serve, run the outside of the kulfi molds under warm water for a few seconds to loosen, then gently remove the kulfi. Garnish with reserved pistachios and enjoy!
