Ingredients

  • 2 cups Besan (gram flour)
  • 0.5 cup Ghee (clarified butter)
  • 1 cup Jaggery (finely grated)
  • 0.5 cup Dates (pitted and finely chopped)
  • 0.5 teaspoon Cardamom powder
  • 0.25 cup Chopped nuts (almonds, cashews, and pistachios optional)

Directions

Step 1

Heat a heavy-bottomed pan or kadhai on low heat and add the ghee to it.

Once the ghee is melted, add the besan (gram flour). Stir continuously to roast the flour evenly. This will take about 12-15 minutes, and you'll know it's done when the besan turns golden-brown and releases a nutty aroma.

Add the chopped nuts to the roasted besan and mix well. Roast for an additional 1-2 minutes to slightly toast the nuts.

Remove the pan from the heat and let the mixture cool slightly (about 5 minutes).

Meanwhile, in a separate bowl, mix the finely grated jaggery and chopped dates together, ensuring the mixture is evenly combined.

Add the jaggery and dates mixture along with the cardamom powder to the roasted besan. Mix thoroughly while the besan is still warm, ensuring the sweeteners blend evenly with the flour.

Once the mixture is cool enough to handle but still pliable, take small portions and shape them into round laddoos using your palms.

Place the laddoos on a plate or tray to set for about 15 minutes.
