Ingredients

  • 3 pieces green plantains
  • 1 teaspoon salt
  • 0.5 teaspoon garlic powder
  • 2 cups water
  • 1 cup cooking oil (such as avocado or vegetable oil)

Directions

Step 1

Peel the green plantains by making a shallow cut along the length of the peel and carefully prying it away from the flesh.

Step 2

Slice the plantains into 1-inch thick rounds.

Step 3

In a large bowl, mix 2 cups of water with the salt and garlic powder to create a seasoned water soak.

Step 4

Place the plantain slices into the mixture and let them sit for 5 minutes while you heat the oil.

Step 5

Heat 1 cup of cooking oil in a large skillet over medium heat until shimmering but not smoking.

Step 6

Remove the plantain slices from the water and pat them dry with a kitchen towel.

Step 7

Carefully add the slices into the hot oil in batches, frying for 2-3 minutes on each side until lightly golden. Do not overcrowd the pan.

Step 8

Remove the fried plantains from the oil and transfer to a plate lined with paper towels to drain excess oil.

Step 9

Using the bottom of a glass or a tostonera (plantain press), flatten each fried plantain slice to about 1/4-inch thickness.

Step 10

Return the flattened plantains to the hot oil and fry again for an additional 1-2 minutes on each side until crispy and golden brown.

Step 11

Remove the tostones from the oil and place them on a paper towel-lined plate to drain. Sprinkle with a little extra salt, if desired.

Step 12

Serve warm as a snack or a side dish, optionally pairing with salsa, guacamole, or a dipping sauce of your choice.
