Ingredients

  • 200 grams Taro root (peeled and diced)
  • 500 milliliters Unsweetened almond milk (or any sugar-free plant-based milk)
  • 1 teaspoon Stevia or monk fruit sweetener (optional, for slight sweetness)
  • 100 grams Tapioca pearls (boba)
  • 1000 milliliters Water (for cooking tapioca pearls)
  • 1 cup Ice cubes

Directions

Step 1

Peel and dice the taro root into small pieces.

Step 2

In a pot over medium heat, add the diced taro root and enough water to cover it. Boil for 20 minutes or until the taro is soft and fork-tender.

Drain the taro and transfer it to a blender. Add the unsweetened almond milk and blend until smooth and creamy. Add a teaspoon of stevia or monk fruit sweetener if desired. Set aside.

In another pot, bring 1000 milliliters of water to a boil. Add the tapioca pearls and stir immediately to prevent them from sticking together.
