Ingredients

  • 200 grams Glutinous rice flour
  • 120 milliliters Warm water
  • 50 grams Unsweetened black sesame seeds
  • 30 grams Crushed peanuts, unsalted
  • 10 grams Powdered erythritol (or any sugar-free alternative)
  • 1 tablespoon Coconut oil
  • 5 slices Fresh ginger
  • 1000 milliliters Water (for soup)

Directions

Step 1

In a small pan over medium heat, toast the black sesame seeds until fragrant (around 3-4 minutes). Let them cool slightly before grinding into a fine powder using a spice grinder or mortar and pestle.

Step 2

Mix the ground sesame seeds with the crushed peanuts, powdered erythritol, and coconut oil to form a paste. If it's too dry, add a few drops of water. Divide into 8 small portions and roll them into balls. Set aside.

Step 3

In a large mixing bowl, add the glutinous rice flour. Gradually add the warm water while mixing with your hands until it forms a smooth, pliable dough. It should not stick to your hands.

Step 4

Divide the dough into 8 equal portions. Flatten each portion into a disc and place one sesame-peanut filling ball in the center. Carefully wrap the dough around the filling, ensuring it is completely sealed. Roll it gently between your palms to make a smooth ball. Repeat for all portions.

Step 5

In a medium-sized pot, bring the 1000 milliliters of water to a boil. Add the ginger slices and simmer for 5 minutes to infuse the flavor.

Step 6

Gently add the tangyuan to the boiling ginger-infused water. Stir gently to prevent sticking. Once the tangyuan float to the surface, cook for an additional 2-3 minutes. Turn off the heat.

Step 7

Serve the tangyuan in the ginger soup and enjoy warm.
