Ingredients

  • 5 medium (about 500g) Tomatoes
  • 1 inch piece Fresh ginger
  • 3 large Garlic cloves
  • 2 whole Green chilies
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Mustard seeds
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 0.25 teaspoon Asafoetida (hing)
  • 8 leaves Curry leaves
  • 1 teaspoon (adjust to taste) Salt
  • 1 tablespoon Tamarind paste
  • 1 tablespoon Vegetable oil
  • 0.5 cup Water

Directions

Step 1

Wash the tomatoes thoroughly and chop them into small pieces.

Step 2

Peel the ginger and garlic, and finely chop them. Chop the green chilies as well.

Step 3

Heat the vegetable oil in a pan over medium heat. Add the cumin seeds, mustard seeds, and asafoetida, and let them sputter for a few seconds.

Step 4

Add the curry leaves, chopped ginger, garlic, and green chilies. Sauté for 1-2 minutes until aromatic.

Step 5

Stir in the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook for about 10 minutes, stirring occasionally, until the tomatoes soften and begin to break down.

Step 6

Add the tamarind paste and 0.5 cup of water. Mix well and let the mixture simmer for another 5 minutes, allowing the flavors to meld.

Step 7

Use a masher or the back of a spoon to slightly mash the tomatoes for a smoother consistency (optional).

Step 8

Taste and adjust salt or tamarind if needed. Remove from heat and let the chutney cool slightly.

Step 9

Serve warm or at room temperature with roti, paratha, dosa, or rice. Store in an airtight container and refrigerate for up to 5 days.
