  • 10 whole Pitted dates
  • 2 cups Water
  • 1 teaspoon Roasted cumin powder
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ginger powder
  • 0.5 teaspoon Chili powder
  • 0.5 teaspoon Black salt (or regular salt)

Directions

Step 1

In a small bowl, soak the pitted dates in 1 cup of warm water for 10 minutes so they soften.

Step 2

In a medium saucepan, combine the tamarind pulp, soaked dates (along with their soaking water), and the remaining 1 cup of water.

Step 3

Cook the tamarind and dates mixture over medium heat for about 10 minutes, stirring frequently. The dates should break down, and the mixture will thicken slightly.

Step 4

Once cooked, let the mixture cool slightly, then transfer it to a blender or use an immersion blender to puree it until smooth. If necessary, you can add more water to adjust the consistency.

Strain the blended mixture through a fine-mesh sieve to remove any fibers or residue for a smooth chutney.
