Ingredients

  • 4 ears Fresh corn (on the cob)
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 1 medium Red bell pepper
  • 0.5 medium Red onion
  • 0.25 cup Fresh cilantro
  • 3 tablespoons Olive oil
  • 2 tablespoons Fresh lime juice
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper

Directions

Step 1

Bring a large pot of water to a boil. Add the corn ears and cook for 5-7 minutes or until tender and bright yellow. Remove the corn and allow it to cool.

Once cooled, use a sharp knife to carefully cut the kernels off the cob. Place the kernels in a large mixing bowl.
