Ingredients

  • 1 cup Popcorn kernels
  • 2 tablespoons Coconut oil
  • 3 tablespoons Butter
  • 0.33 cup Granulated erythritol
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Baking soda
  • 2 tablespoons Water

Directions

Step 1

Heat a large pot over medium heat and add 2 tablespoons of coconut oil.

Step 2

Add the popcorn kernels to the pot, cover it with a lid, and shake the pot occasionally to prevent burning. Cook until the popping slows to about 2–3 seconds between pops, then remove from heat.

Step 3

Transfer the popped popcorn to a large mixing bowl, discarding any unpopped kernels.

Step 4

In a small saucepan over medium heat, melt the butter (or vegan butter alternative).

Step 5

Add the granulated erythritol, two tablespoons of water, and salt to the saucepan. Stir constantly until the erythritol dissolves completely, and the mixture begins to simmer lightly.

Continue cooking the syrup for 2–3 minutes, stirring occasionally, until it thickens. Remove from heat and quickly stir in the vanilla extract and baking soda. The mixture will bubble slightly as the baking soda reacts.

Immediately pour the caramel mixture over the popcorn, using a spatula or wooden spoon to coat the popcorn evenly. Work quickly, as the caramel will harden as it cools.
